Some of you may remember Josh, the young man who visited Rodos in February and declared his favourite food to be burgers while vociferously hating McDonalds. On that visit we took Josh and his family to the Walk Inn in the Old Town and the JoshBurger was invented Kalliopi Kitchen 43
At the time I promised Josh that on his next visit I would teach him my secret burger recipe.
I have been making my burgers since I was a teenager and while a burger recipe is a relatively simple construct people have always remarked on how special, and different, my burgers taste. I have never revealed to anyone why my burgers taste just that little bit different.
This week Josh returned to Rodos and, as promised, I passed on my secret.
Josh has sworn never to reveal, at least until he is my age – which is centuries to an eight year old! Like many young people Josh takes the kitchen seriously and proved himself to be a dab hand at garlic and herb chopping. We also discussed what I like to call “Burger Etiquette”. If you are having a gathering of people for a barbecue I like to encourage the people I’m cooking for to build their own burgers, so to speak. I place a large plate on the table with all the ingredients everyone there could possibly want in their burger. I ask every individual how they like their burgers cooked, their buns warmed or not and their cheese melted or not.
